I was going to take some things from an old Windows OS laptop plus use to back up from my Mac.

A lot of the info went over my head but I am left concerned that should I use the hard drive to store what I have and then install the High Sierra OS I may encounter problems or worse lose precious data.

Apple seem to lack communication with their customers and are difficult to contact directly with concerns.
